DNA Depot: What are Enzymes? Kit

Demonstrate to students that enzymes are very specific in their mode of action as proteins that catalyze or accelerate reactions in cells. In this experiment, protease — a protein digestive enzyme, will be used to digest the protein gelatin used in Jell-O and other foods. Students then test the effect of pH and temperature on enzyme activity. Includes materials for six experiments and a teacher’s guide.
